[HOW to MAKE] BAMBOO SHOOT RICE, Spring traditional dish in Japan

  • Ta-ke-san received bamboo shoots from his friend. This time, he made TAKENOKO-GOHAN, cooked rice with bamboo shoots.
    [RECIPE]Usually, bamboo shoots are cooked with their peels, but he removed them beforehand this time.
    1. Remove Bitter Staff from BambooThe main components of bamboo shoots scum are homogentisic acid and oxalic acid. When bamboo shoots are boiled with rice, these components are removed. Boil the bamboo shoots for one hour, allow them to cool naturally to room temperature, and then refrigerate overnight.

    3. RICE cookingCut the ginger into thin strips. Cut the fried tofu into thin strips.Cut the chicken into dice and mix with a tablespoon full of sake. The sake softens the meat and removes the smells.Add the broth in which bamboo shoots, the Bamboo Shoots and the chicken to a rice cooker with rice. Cook the rice with 1 hr.
    4. FinishTo finish the dish, add Japanese paper leaves to the rice.Putting the leaves on top of the bamboo shoot rice enhances the fravor of spring. The dish is now complete.

      Thanks for the comment. Cold sake is a great idea!
      I also made grilled bamboo shoots wrapped with alumn foil and mixed rice with these bamboo shoots and Teriyaki-chicken. It was delicious, and I will post it on RUclips in two weeks.
